Oyster Stuffing

Go with a Winner, Oyster Stuffing!

We can thank the British colonists for oysters mixed into a traditional stuffing. Rich and buttery from toasted wheat bread cubes and pockets of briny-sweet oysters, this stuffing receives cries for seconds from all generations sitting around the holiday table. During the feast, most diners opt to cheat on their diets, but I attempt to keep a hint of fitness sanity in some ingredient choices like egg whites, whole wheat bread crumbs, and oregano. Feel free to stick to the traditional products for an even richer taste.

Get your Ingredients Together.

1 tbsp. extra virgin olive oil

1 cup chopped celery

1 cup chopped scallions

8 cups dry whole wheat bread crumbs

2 tbsp. chopped parsley

3 cups oyster with liquid

½ cup egg whites

1 ½ tsp. lemon juice

¼ tsp. pepper

1 tsp. oregano

1 tsp. thyme

Make some oyster magic!

Prepare for Success. Preheat the oven to 325 degrees F and grease a large casserole dish with extra virgin olive oil.

Get it Sizzling. Heat oil in a skillet. Then add the celery and scallions.  Sauté for about 5 minutes. Mix in the bread crumbs and parsley and remove from the heat.

Combine in a Bowl. Transfer all ingredients into a large bowl with a rubber spatula. Then add the oysters, eggs, lemon juice, pepper, oregano, and thyme. Stir in oyster liquid and mix until the bread cubes become moist. With the spatula, transfer all ingredients into the casserole dish.

Bake with the Oven Light on. Keep your eye on the baking. It will take about 45 minutes and you’ll note a toasting, golden brown on the top. Make sure it doesn’t burn though. If you notice some charring, lower the rack away from the coils or turn back the heat. Once done, take a knife and insert it into the stuffing and remove it. If nothing is sticking to the knife, your oyster stuffing is ready for the feast!
